I bring together learning, food, and human development to create meaningful, sustainable, real-life ways of learning, working, and living.
I am an entrepreneur, educator, and author working at the intersection of learning, food, and human development.
My work is driven by a deep commitment to rethinking how we understand learning, development, and human potential — especially in contexts where traditional systems do not fully support the individual.
Food has been a central part of my work for many years — not just as nutrition or cooking, but as a powerful entry point into connection, structure, and learning. Through food, sensory experiences, and real-life contexts, I create spaces where different ways of thinking and being can be supported and understood.
I work with both adults and families in flexible, non-traditional learning environments, always adapting my approach to individual needs, learning styles, and everyday life. My approach is neurodiversity-affirming and grounded in respect for individual differences rather than standardisation.
I have written 23 cookbooks and spent many years working with food, health, and everyday life — both professionally and creatively. My work also draws on a deep interest in and knowledge of functional nutrition, sensory experience, and how food, supplements, and natural approaches can support wellbeing, especially for individuals experiencing stress or complex life situations.
As a mother of a neurodivergent teen, my work is also deeply personal. It is shaped by lived experience — and by a strong focus on sustainability, strengths, and real-life applicability.
With Danish and Italian roots, I work across cultural and educational contexts and am fluent in Danish, English, German, and everyday Italian.
I develop and work with flexible, neurodiversity-affirming learning environments — both online and in practice.
I teach Danish to adults and professionals and work with alternative approaches to learning that respect individual differences.
